How do we do "shock freezing"?

Stage 1. We select high-quality raw materials

We sort through the berries, check them for integrity, taste, freshness, absence of dents, mold, dirt. To the maximum, we remove all garbage – leaves, twigs, stalks, etc.

Stage 2. Preparing raw materials for freezing

Wash the selected berries, dry them in the open air, in one layer on a fine mesh. Place them on a freezing tray.

Stage 3. Freezing the berry

We cool the berries in specialized equipment for delicate products using a three-stage technology, gradually changing the power by 30%, 60% and 100%. This approach gives a gradual penetration of cold into the berry, preserves the integrity of its structure, taste and benefits.

How to properly store and defrost berries?

Berry subjected to "shock freezing" stored at a temperature not higher than –18°C and not lower than –25°C, at a relative humidity – 90-95%. During the storage period, thawing of the product is not allowed.

It is necessary to defrost berries at a temperature of +2°C…+4°C for 12 hours. Or in a specialized cabinet for defrosting (defrosting food).
